Simple Tabbouleh

Parsley grows abundantly but there’s so few uses for it, I find.

But do I ever love tabbouleh.

Recipe:

2 tablespoons olive oil
1 small white onion (chopped)
1 large tomato (chopped)
1/2 cup lemon juice
1 cup burghul (cracked wheat), rinsed
1 cup fresh mint leaves (chopped)
3 cups fresh parsley (chopped)
