I am not a fan of spinach’s taste or texture, but it’s a plentiful, healthy leafy green.
Bhajis (basically Indian fritters), add a crunchy texture and a wonderful taste thanks for the spices. And they are surprisingly easy to make.
Ingredients:
- 3 cups of chickpea flour
- 250 grams of chopped spinach
- A large, sliced onion
- A large, chopped green chili pepper
- 2 tablespoons of chopped ginger
- 1 tablespoon of crushed/chopped garlic
- 2 teaspoons of ground turmeric
- 2 teaspoons of chili powder
- 1 teaspoon of cumin seeds
- Water to make a thick batter
- Salt to taste
Process:
- Mix the dry ingredients (chickpea flour, spices)
- Mix the fresh ingredients into the dry mixture
- Slowly add water until you get a thick batter
- Heat up your oil (remove basket if using a deep fryer)
- Form spoonfuls of the batter and drop into the hot oil
- Eat hot. Nice to dip in Greek yogurt.
