Recipe: Bhajis (A Spinach-Onion Fritter with Spices)

I am not a fan of spinach’s taste or texture, but it’s a plentiful, healthy leafy green.

Bhajis (basically Indian fritters), add a crunchy texture and a wonderful taste thanks for the spices. And they are surprisingly easy to make.


  • 3 cups of chickpea flour
  • 250 grams of chopped spinach
  • A large, sliced onion
  • A large, chopped green chili pepper
  • 2 tablespoons of chopped ginger
  • 1 tablespoon of crushed/chopped garlic
  • 2 teaspoons of ground turmeric
  • 2 teaspoons of chili powder
  • 1 teaspoon of cumin seeds
  • Water to make a thick batter
  • Salt to taste


  1. Mix the dry ingredients (chickpea flour, spices)
  2. Mix the fresh ingredients into the dry mixture
  3. Slowly add water until you get a thick batter
  4. Heat up your oil (remove basket if using a deep fryer)
  5. Form spoonfuls of the batter and drop into the hot oil
  6. Eat hot. Nice to dip in Greek yogurt.
