A Variety of Pad Thai Recipes

1) Easy, Totally Inauthentic Pad Thai


  • 300g noodles
  • 500g of tofu, chicken, pork, beef or shrimp
  • 1 cup of chopped fresh vegetables (broccoli, carrots and onions)
  • 2 tbsp of vegetable oil
  • 4 tbsp of soy sauce
  • In place of tamarind paste (1/4 cup packed dark-brown sugar, 1 Tbsp lime juice, 2 Tbsp rice vinegar)
  • 2 cloves garlic (minced)
  • 3 large eggs

Optional garnishes:

  • 1/2 cup unsalted peanuts (chopped)
  • 1/3 cup cilantro (chopped)
  • Red pepper flakes and sesame seeds

Instructions for All Recipes:

  • Boil water and add noodles for a few minutes until flexible but not soft
  • Heat oil in a wok or pan
  • Mince garlic and add to oil. Sizzle garlic. Add hot sauce, if desired.
  • Slice meat thin and thoroughly cook through in the wok
  • Add vegetables
  • Add noodles and heat until thoroughly cooked
  • Stir in soy sauce
  • Add a bit of oil to an empty part of the wok and crack the egg over it
  • Scramble the egg into the noodles
