1) Easy, Totally Inauthentic Pad Thai
Ingredients:
- 300g noodles
- 500g of tofu, chicken, pork, beef or shrimp
- 1 cup of chopped fresh vegetables (broccoli, carrots and onions)
- 2 tbsp of vegetable oil
- 4 tbsp of soy sauce
- In place of tamarind paste (1/4 cup packed dark-brown sugar, 1 Tbsp lime juice, 2 Tbsp rice vinegar)
- 2 cloves garlic (minced)
- 3 large eggs
Optional garnishes:
- 1/2 cup unsalted peanuts (chopped)
- 1/3 cup cilantro (chopped)
- Red pepper flakes and sesame seeds
Instructions for All Recipes:
- Boil water and add noodles for a few minutes until flexible but not soft
- Heat oil in a wok or pan
- Mince garlic and add to oil. Sizzle garlic. Add hot sauce, if desired.
- Slice meat thin and thoroughly cook through in the wok
- Add vegetables
- Add noodles and heat until thoroughly cooked
- Stir in soy sauce
- Add a bit of oil to an empty part of the wok and crack the egg over it
- Scramble the egg into the noodles
